You can use any fruit or fruit combo you want for this.
* You can quickly rehydrate any of those great Honeyville FD Fruits for this recipe!
1) Set your solar oven out to pre heat.
*You can use a glass baking dish or a dark 3 qrt pot for this recipe.
2)MIX TOGETHER IN A BOWL
1-15 oz can of diced peaches
1-15 oz can of whole cranberry sauce.
1/4 cup white sugar
1/4 cup brown sugar
* yes, you can use all brown if you prefer
1/4 tspn cinnamon
1/8 tspn nutmeg
* I 1/4 tsp used Chef Tess Wise Women of the East in place of the cinnamon & nutmeg!
1 tspn lemon juice
2 tspn cornstarch
3)MIX TOGETHER IN A SEPERATE BOWL
1 cup All Purpose Flour
1/4 cup white sugar
1/4 cup brown sugar
baking powder
1/2 tspn salt.
6 Tablspns of butter
1/4 cup very hot water - add last
Blend in butter with a pastry blender, until mixture resembles coarse meal.
Stir in water until just combined.
Pour this into your cooking dish or pot.
4) Drop spoonfuls of fruit topping over them.
Sprinkle entire cobbler with the sugar and cinnamon mixture.
5) Bake until topping is golden.
If your sun oven is at 325 - it will be approx. 45- 50 mins.
If your sun oven is at 350 - it will be approx. 40-45 mins
